Here’s a very tasty and healthy twist to the traditional Peanut Butter and Jelly sandwich. We’ve seen healthy versions that switch up the traditional peanut butter and jelly sandwich. Swapping “white” bread with whole grain (and now) gluten free bread. Of course organic peanut butter and strawberry preserves made them a bit healthier, but there was still that sugar thing with the preserves. THIS Recipe really kicks it up a notch by using dates (for sweetness) instead of the strawberry preserves.

2 of either whole-grain, gluten free, etc pita pockets
½ cup Organic peanut butter
8 dates, pitted and chopped (Medjool if available)
2 Bananas, peeled and sliced
Cut each pita bread in half, crosswise, to form four pita pockets.
Carefully open each pita pocket and spread 1 TBS. of peanut butter to each of the interior sides.
Top the peanut butter with the chopped dates, which have been evenly divided.
Add the banana slices to each pita sandwich and then gently press the sides together to reform pita pockets.
Isn’t it amazing how simple it is to get the kids to eat nutritious food? <wink-wink>
