BERRIES! Among summer’s most delicious treats is the abundance of berries! This is the time to take advantage of the super anti-oxidant benefits in blueberries. Fresh strawberries, raspberries, and blackberries are an excellent source of fiber, as well as vitamin C. A single cup of berries was found to top the list of all fruits, to provide the recommended daily intake of antioxidants for disease-fighting purposes.
Choosing Your Berries at the Market
• Choose dry, plump, and brightly colored berries with no obvious rotten spots. Check all areas of the containers for juice stains — this is a sign that the berries were not properly packaged or they may be overripe.
• Check the fruit for mold — berries are notorious for spreading this unappealing grayish/blue fuzz!
• When you bring home your berries, store them unwashed in the refrigerator in a covered container. Fresh berries do not last long. Be sure to eat them within a few days of purchase.
• Berries can also be frozen and stored for up to four months. Simply spread them out on a baking tray and freeze in batches. Place them in a glass container or zip top freezer bag.
