Cool Off With Pineapple Mint Popsicles

We are smack-dab right in the middle of summer and fresh fruit is everywhere! Be sure to take advantage of shopping at your local farmer’s market and produce section of the grocery store! Pineapples are a favorite of everyone, and these homemade fresh pineapple popsicles with be a huge hit on those hot, muggy summer afternoons! From

Summer Pineapple Mint Fruit Pops
Makes 8 Pops.

5 fresh Mint sprigs – remove all leaves and set aside
1 ripe Pineapple, top removed, peeled & cut into spears (do not core)

Juice the mint and pineapple in an electric juicer according to the manufacturer’s instructions. Stir and taste it to see if it’s sweet enough for you. You may add raw honey or stevia leaves if it’s too tart.
Carefully pour the juice into each ice pop mold (don’t overfill) and freeze over night.
Option: Add a little of the pulp saved from your juicer for texture.
