The weekend is finally here! If you are like most Moms (and Dads), you are always happy to find a recipe that is easy to make, healthy and something the kids will eat. This delicious dish is all of that and who needs the bag of chips anyway?
Chicken Apple Wraps
1/2 Cup chopped cooked chicken breast
3 Tbs. chopped organic Fuji Apple
2 Tbs. diced organic Red Grapes
2 Tbs. Crunchy Peanut Butter
1 Tbs. unflavored organic Greek yogurt
2 tsp. Organic Raw honey
Iceberg lettuce leaves, rinsed and dried
Chop chicken meat and fruit, mix in bowl.
Mix in peanut butter, plain Greek yogurt and honey.
Spoon into open lettuce leaf, roll and serve. You may substitute the lettuce leaves for rice paper.
