Coconut water is the liquid inside young coconuts. As the coconut matures this liquid largely becomes absorbed into the flesh found in mature coconuts. Coconut water has long been a popular drink in the tropics. It is naturally low calorie and fat-free (16.7 calories per 100 g or 3.5 ounces). It is often marketed as a sports drink because of its high potassium and mineral content which helps the body recover from rigorous exercise.
In an emergency situation often in undeveloped countries, coconut water had been successfully used as an intravenous fluid (IV) resuscitation of patients with dehydration or hypovolemia, because of its sterility, pH, mineral, and sugar content, it is isotonic and very close to the properties in our blood.
Choose organic, young coconuts that have no deep cuts or holes on the outside. A few scratches is okay. You can often find organic, raw coconuts in farmer’s markets and whole foods stores.
