Holy Guacamole!

Avocados are extremely nutritious and a delicious way to add good fat to your menu. There are many recipes and ways to enjoy avocados, but Guacamole is one of my favorites. It’s very easy to make and it tastes great on anything from chips to a topping for baked chicken or fish! I hope you enjoy my version.

Ingredients

Guacamole-Ingredients4 ripe Avocados
2 Tbs. Lime juice from fresh lime
1 large Tomato, diced
½ Onion, diced
1 Garlic clove, minced
1 C loosely packed fresh cilantro
1 tsp. Celtic sea salt

Directions:

Guacamole-avocadoCut the avocados in half, remove pit, spoon out avocado meat in a bowl. Chop up with knife or a fork. I love chunky guacamole, so I chop in chunks, but you can chop or mash yours as you like it. Add chopped avocados in big mixing bowl

 

Guacamole-tomatoesAdd rest of ingredients. Mix well. This is the great part – you can custom make this dish. If you want a tad more lime or a little more garlic or a touch more salt – you adjust to your taste! Guacamole-cilantro-onions

 

 

 

Guacamole-finished-productMake a couple hours ahead to let flavors combine together.

Serve with organic corn chips or with chopped veggies or spoon over a salad. Yum!
