Noodles & Veggies in Peanut Sauce

I want to share a lovely and simple dinner recipe I fixed tonight.  AND it’s Vegan.

Kelp Noodles, steamed veggies and Peanut Sauce.

As most of you know, kelp is a wonderful sea vegetable with attributes almost too numerous to mention.  Kelp is rich in minerals, low in calories, low in carbs and fat free.  It is free of allergens and has a neutral taste so has endless uses.

Tonight I steamed fresh veggies then added the sea kelp noodles (as a pasta substitute) then mixed the two ingredients with peanut sauce.  I put the sea kelp noodles with the hot steamed veggies which warmed the noodles without cooking them.  I used the veggies I already had in the house – carrots, onions, broccoli.

The peanut sauce recipe is really simple and the ingredient I love most is MISO.

Miso is another powerhouse , nutrient- dense food.  It is an amazingly versatile food that is fermented and has true healing qualities.  Just a few of those qualities are that it contains a full amino acid profile making it a complete protein, it also aids in digestion.    If you are ailing – one of the best things you can do for yourself is to make some simple miso soup – you’ll be feeling great in no time!  Miso also helps reduce the risk of many types of cancer including lung, prostate, breast & colon.

My favorite Miso is made by a family owned company in the Berkshire Mountains in Mass — South River Miso.

Peanut Sauce Ingredients:

1 part Miso

3 parts peanut butter

Water – add to desired consistency

1 Tbsp sugar

Dash of sesame oil and vinegar

Combine all ingredients to make dressing and pour over veggies and noodles, mix well.  ENJOY!
