Quinoa is high in protein (with all the essential amino acids), low in fat, and full of vitamins and minerals, plus it’s easy to cook and tastes great!
If you’re looking for a light and healthy vegetarian main course or side dish to enjoy this summer, give this salad a try!
1 cup of quinoa
1 tablespoon of cumin
1 teaspoon of turmeric
1 teaspoon of himalayan salt
1 teaspoon of coconut oil or olive oil
1 teaspoon of black pepper
1/2 teaspoon of cayenne pepper if you want it spicy!
1. Add the quinoa and 2.5 cups of water to a pot. Bring to the boil and then reduce heat, cover and simmer for 15 minutes.
2. The water will evaporate (like cooking rice). Add the spices (the rest of the ingredients) and continue to cook for another 5 minutes or until moist and soft.
Serve with Avocado, fresh Parsley and a squeeze of Lemon!
