Watercress Benefits and Recipe!


Watercress Dressing

(taken from The Body Ecology Diet)


2 TBSP fresh lemon juice

1 TBSP raw, organic apple cider vinegar

½ tsp dried tarragon

¼ C organic unrefined oil (olive, sunflower)

Salt & Pepper to taste

1 bunch watercress, finely chopped



1)      Mix together lemon juice, vinegar, tarragon, oil, S&P until well blended

2)      Stir in finely chopped watercress
